Dry roasted nuts are best kept in the refrigerator, and can be used for up to one year. They can additionally be frozen for up to two years. Adding coatings and seasonings actually extends the shelf life because they "seal" the nut. Our nuts are stored in-shell and then cracked and roasted on demand. We prefer that you order what you reasonably expect to use and then reorder so that you are guaranteed the freshest product for your baking.
Many prefer to purchase raw nuts and roast as part of the holiday or party festivities. It's easy- just lay the nuts single layer on a cookie sheet and bake at approximately 250 degrees for approximately 1 hour. Adjust roasting time to personal taste. The aroma will fill the whole house and when warm the natural sweetness is a new taste treat. The skins can be removed (if desired- its not necessary) by rolling the warm nuts between two layers of toweling.
